If you love spicy food, then Rogan Josh is a dish you must try. This Kashmiri dish is famous for its red color and rich flavor. The dish is made with mutton, but you can also make it with chicken or lamb. The spices used in this dish are what give it its unique taste and aroma.
- 500 grams mutton/lamb/chicken
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 2-3 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons Rogan Josh masala
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 2 tablespoons oil
- Salt to taste
- Water as required
- Fresh coriander leaves for garnish
Heat oil in a pan and add finely chopped onions. Saute them until they become translucent.
Add ginger-garlic paste and saute for a minute.
Add chopped tomatoes and green chilies. Cook for 2-3 minutes until the tomatoes become soft.
Add Rogan Josh masala, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for a minute.
Add mutton/lamb/chicken and mix well. Cook for 2-3 minutes until the meat changes color.
Add water as required and mix well. Cover the pan and cook for 25-30 minutes or until the meat is cooked and tender.
Once the meat is cooked, remove the lid and let it cook for a few more minutes to thicken the gravy.
Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
